Since, I have been incredibly busy at work this week/too lazy to really put in the effort to make anything, I prepped this meal for the week. The only thing you really need to prep are the noodles, which are super easy to make. Go to my past Soba Noodle Dish recipe HERE to see how to cook up the noodles.
While the noodles are cooking, i chop up all the extra ingredients that I want in my salad – you can put anything in there. I stuck with tofu, lettuce, and cherry tomatoes because I enjoy that mix with the soba noodles. When the noodles are cooled and ready, I topped my salad foundation with a pile of noodles, and finished it with a scoop of Thai Peanut Sauce, and a hint of salad dressing. I tend to use a Brianna’s Poppy Seed dressing or Feast from the East Sesame dressing (Costco). Mix that all together and you got yourself a delicious and healthy meal!
