Beet, Pecan, & Goat Cheese Salad

IMG_0162

This has been my go-to lunch this week (I’ve had it 3 times now…). I bought a giant bag of spinach and those already-ready beets from TJs, so I felt like I had to eat them all before they went bad!! But hey, definitely not complaining bc this salad is amaze and packed full of antioxidants!

Ingredients:

♥ Spinach
♥ Beets
♥ Goat cheese
♥ Avocado
♥ Pecans
♥ Lentils

Throw your ingredients in a big bowl in your desired proportion, and toss with balsamic! If you need a little extra something to keep you full, try adding a protein like chicken or shrimp! Sprinkle some fresh pepper on top, and voila! Enjoy!

Quick Dish: Tofu Soba Salad

Processed with VSCOcam with g3 preset

Soba Salad

Ingredients:
Cherry Tomatoes
Soba Noodles
Lettuce/Spinach
Tofu
Feta Cheese

Since, I have been incredibly busy at work this week/too lazy to really put in the effort to make anything, I prepped this meal for the week. The only thing you really need to prep are the noodles, which are super easy to make. Go to my past Soba Noodle Dish recipe HERE to see how to cook up the noodles.

While the noodles are cooking, i chop up all the extra ingredients that I want in my salad – you can put anything in there. I stuck with tofu, lettuce, and cherry tomatoes because I enjoy that mix with the soba noodles. When the noodles are cooled and ready, I topped my salad foundation with a pile of noodles, and finished it with a scoop of Thai Peanut Sauce, and a hint of salad dressing. I tend to use a Brianna’s Poppy Seed dressing or Feast from the East Sesame dressing (Costco). Mix that all together and you got yourself a delicious and healthy meal!

When you are on the go, what are your favorite quick and easy dishes to make?

Green Bean, Tomato, and Feta Salad

Green Bean, Tomato, and Feta Salad

Ingredients:
Cherry Tomatoes
Green Beans
Green Onions
Feta Cheese

Dressing Ingredients:
2 T Olive Oil
2-3 T Red Wine Vinegar (I noticed that 3 made it taste a bit better)
1 T Freshly-Squeezed Lemon Juice
3/4 tsp. Salt (Sea Salt preferably)
1/2 tsp. Freshly-Ground Black Pepper
1/2 tsp. Dried Oregano (Optional)

*If you don’t want to make your dressing, feel free to use Italian or Balsamic Dressing.

This salad is one of my faves! It is healthy, tasty, pretty, and easy to make – there is really no reason not to share it! If you decide to make your own dressing, then I would prepare that first. As soon as you finish mixing your dressing ingredients together, begin to cut your green beans into bite-sized pieces (make sure to trim the ends of the beans beforehand). When you are finished cutting, place the green beans in a pot of boiling water (feel free to add some salt), let the beans cook for 3-4 minutes.

While the beans cook, cut the cherry tomatoes in half and chop up the green onions. As soon as the green beans are done cooking (crisp), drain into a colander, then immediately rinse the beans with cold water until they’re cooled. Make sure to completely dry/drain the beans by blotting them with paper towels. If you do not thoroughly dry the beans, then your salad will be watery.

Now, you are ready to mix together all ingredients – beans, tomatoes, green onions, feta cheese, and dressing! Stir the salad until all pieces are coated with dressing. BON APPÉTIT!

Rainbow Salad Recipe

IMG_6736

Yum yum yum! This salad has forever been one of my faves and I was shocked when I made it for lunch and realized I hadn’t yet shared it on the blog!!

This salad is super easy and — like all of my fave salads — is tasty and filling and has so many goodies there’s no need for dressing! Weeee-heee to feeling healthy and full and #eatingclean.

This is how I make it, but feel free to substitute any goodies that you prefer:

♥Lettuce, finely chopped
♥Whole red beets, halfed
♥Garbanzo beans
♥Avocado
♥Sweet potatoes
♥Baby tomatoes
♥Green onion garnish

Mix in whatever proportions you desire! (I usually go big on the non-lettuce items bc let’s be real, lettuce is soooo boring.)

I really enjoy pairing this meal with my favorite coconut water. It’s $11 which is like WOW, but I continue to buy it time & time again. That’s a testament to how.amazingly.good. this stuff is! Try it here!

Skinny Minnie Lunch: Quinoa Salad + Bubbly!

20140526-144246-52966193.jpg

This salad is so yummy!! It’s perfect for weekends like Memorial day when you’re going to be in a bikini and don’t want to bloat &/or overeat in the sunshine!

Here’s what you’ll need:

♥ 1 cup quinoa,  cooked
♥A few sprigs of mint leaves (ours are fresh from the garden! yay!)
♥ 1/2 tomato, diced
♥1/2 cucumber, diced
♥1 full grapefruit

Mix it all together and serve! We like to garnish with extra mint. Bonus: the grapefruit juice acts as a divine dressing, making this salad super low-cal!

Of course, why save all those calories if not to have a little drinky too ;)

I made grapefruit bellinis with my faveee champ – Perrier Jouet! (Yep – we got the extra large bottle. Party time!)

Here’s what you’ll need:

♥Champagne
♥Grapefruit

Scoop out some fresh grapefruit juice & meat and place into the bottom of a champagne flute. Top with your favorite champagne. Enjoy. Repeat.
