Skinny Minnie Lunch: Quinoa Salad + Bubbly!


This salad is so yummy!! It’s perfect for weekends like Memorial day when you’re going to be in a bikini and don’t want to bloat &/or overeat in the sunshine!

Here’s what you’ll need:

♥ 1 cup quinoa,  cooked
♥A few sprigs of mint leaves (ours are fresh from the garden! yay!)
♥ 1/2 tomato, diced
♥1/2 cucumber, diced
♥1 full grapefruit

Mix it all together and serve! We like to garnish with extra mint. Bonus: the grapefruit juice acts as a divine dressing, making this salad super low-cal!


Of course, why save all those calories if not to have a little drinky too ;)

I made grapefruit bellinis with my faveee champ – Perrier Jouet! (Yep – we got the extra large bottle. Party time!)

Here’s what you’ll need:


Scoop out some fresh grapefruit juice & meat and place into the bottom of a champagne flute. Top with your favorite champagne. Enjoy. Repeat.



Steamed Fish and Veggies

So much to do, but so little time? Constantly eating out because you’re too drained to cook after a long day of school or work? Well, you are in luck! We have a recipe for you that is fast, easy, healthy, and delicious!

Fish loins/fillets (I get the frozen pack of tilapia loins from Costco)
Veggies (dill,onions, kale, spinach, bell peppers, etc)
Lemon and Capers (optional)
Spices (pink himalayan salt, lemon pepper, cayenne pepper, etc)
Pan & lid


Lay out a bed of chopped veggies on the foil – this is the foundation for your fish and a great way to prevent it from sticking to the foil.


Once you put the fish over your veggies, squeeze some lemon on top. This gives the fish a little zing and is a great way to keep the spices on the fish.


Sprinkle your flavor – I usually add some Pink Himalayan Salt or Lemon Pepper/Cayenne Pepper. Once I put on the seasoning, I cover the fish with the lemons I previously used. IMG_9489


Tightly fold up your fish in the foil – you want to keep it as compact as possible! Once you’ve done that, put it on the pan and cover it!



Put the heat on medium-high for 15 minutes. After the 15 minutes are up, check your fish – the foil should be puffed up – that is how you determine if it is ready or not. You can also carefully open up the foil and use your fork to poke around at the fish to make sure it is cooked. If it is not cooked, fold it back up as best you can, cover it, and leave it on for a few minutes longer.

Once it’s ready, you should get this…


You are ready to chow down! If you still want a little extra flavor, go ahead and drizzle a little soy sauce or some siracha to add a kick to it! You can also pair the dish with qunioa and more veggies!
