These little bites are too easy and delicious to be this healthy! As you know, I’m always looking for new healthy snacks that are guilt-free. These are perfect and quick, and even my non-healthy friends couldn’t get enough (tricked ’em)!
Slice persian cucumbers at an angle (slicing at an angle makes the surface longer so that you can load it with more content!). Next, spread with a dallop of hummus and top with a little piece of smoked salmon. These are also great with prosciutto!
This has been my go-to lunch this week (I’ve had it 3 times now…). I bought a giant bag of spinach and those already-ready beets from TJs, so I felt like I had to eat them all before they went bad!! But hey, definitely not complaining bc this salad is amaze and packed full of antioxidants!
Throw your ingredients in a big bowl in your desired proportion, and toss with balsamic! If you need a little extra something to keep you full, try adding a protein like chicken or shrimp! Sprinkle some fresh pepper on top, and voila! Enjoy!
