These little bites are too easy and delicious to be this healthy! As you know, I’m always looking for new healthy snacks that are guilt-free. These are perfect and quick, and even my non-healthy friends couldn’t get enough (tricked ’em)!
Slice persian cucumbers at an angle (slicing at an angle makes the surface longer so that you can load it with more content!). Next, spread with a dallop of hummus and top with a little piece of smoked salmon. These are also great with prosciutto!

Even if you’re stuck in the midst of snow flurries, this refresher will help you to pretend you’re somewhere “sunny and seventy-five”.
Here’s what you’ll need:
o Fresh cucumber
o Grapefruit juice with pulp
o Cucumber vodka
In a cocktail shaker, mix 2.5 oz cucumber vodka with 0.5 oz vermouth and 1 oz grapefruit juice. Add half a cup of crushed ice and shake vigorously. Strain into a glass and top with a splash of champagne and cucumber slices! It’s that easy! Cheers!
