Cucumber Salmon Hummus Bites

These little bites are too easy and delicious to be this healthy! As you know, I’m always looking for new healthy snacks that are guilt-free. These are perfect and quick, and even my non-healthy friends couldn’t get enough (tricked ’em)!

Slice persian cucumbers at an angle (slicing at an angle makes the surface longer so that you can load it with more content!). Next, spread with a dallop of hummus and top with a little piece of smoked salmon. These are also great with prosciutto!

Chobani Grammy Guacamole

There’s nothing I love more than an afternoon of oogling beautiful women in superb fashions! HELLO awards season! Of course, I love to indulge in my usual favorites (chips and guac, refreshing beer, hiii!). Here’s a healthy, fruity twist on my fave guacamole! And if you’re trying to stay healthier — yes, those tiny, beautiful women can have an inspiring influence — use thinly cut carrots or cucumbers instead of chips!

The key ingredient here is (SHHH!) Chobani yogurt. Check it out here, or our fave peach flavor here! That’s right, we even went extra bold and used a peach Chobani, just to give our guac a little extra somptin somptin!

Here’s what you’ll need: 

♥ 1 cup peach Chobani yogurt
♥ 2 avocados
♥ 1/2 tomato
♥ 1-2 stalks celery
♥ sharp cheddar
♥ feta cheese

Finely chop the cheese, tomatoes, and celery. Combine in a bowl with avocado and Chobani yogurt. Mix well, using a fork to work the mixture in with the avocado. We add cayenne pepper and salt for extra flavor!

Beet, Pecan, & Goat Cheese Salad

This has been my go-to lunch this week (I’ve had it 3 times now…). I bought a giant bag of spinach and those already-ready beets from TJs, so I felt like I had to eat them all before they went bad!! But hey, definitely not complaining bc this salad is amaze and packed full of antioxidants!

Ingredients:

♥ Spinach
♥ Beets
♥ Goat cheese
♥ Avocado
♥ Pecans
♥ Lentils

Throw your ingredients in a big bowl in your desired proportion, and toss with balsamic! If you need a little extra something to keep you full, try adding a protein like chicken or shrimp! Sprinkle some fresh pepper on top, and voila! Enjoy!

Bullet Proof Coffee

Breakfast is the most important meal of the day…

As much as I buy that statement, ain’t nobody got time for that!! I usually hit the gym in the morning, which means I either turn to an $8 Equinox smoothie (so bad for the bank when that becomes a daily habit), OR I make bullet proof coffee when I get to work.

That’s right. It’s bullet proof because it’s badass and keeps you SO FULL for SO LONG that it’s kind of amazing. Plus, it’s CHEAP & HEALTHY. I know, you love me.

Literally, all you do is brew yourself a cup of joe, then add in a spoon of virgin organic coconut oil & 1-2 scoops protein powder (stick with vanilla or chocolate). This makes your coffee super thick and creamy and delicious! The oil and protein powder are great for you, perfect for post workout (or for just getting you the hell out of bed), and will keep you full til lunch time!

This place is a little magical getaway in the middle of Los Olivos. It’s perfect for brunch because outdoor seating is plentiful. There’s a huge grassy outside area with bocce ball, live music, and lots of space for dancing and frolicking in the sunshine! Plus, the food is amaaaaazing. So is the coffee. Do you really need anything more?? #heaven

Brunch was followed by a fun little photo shoot around the grounds! We were all soooo over caffeinated after 4 cups of coffee each… the stuff was just so damn good and they kept refilling our mugs!!

How fun is this little chalk board cabana?? It’s literally a cabana on the grounds and the walls are all chalk… pretty sure it’s there for little kids to doodle on while their parents brunch. We’re kids. That’s why we love it.

Guilt Free Berry Cobbler

It’s winter, and when it’s cold out I crave desserts. Have you seen the New Girl episode where Nick’s girlfriend/sleep over buddy “…just isn’t a dessert person” and Jess freaks out? Because seriously!? Who is not a dessert person?? You can lie to yourself all you want, but I’m pretty sure if you don’t like dessert you don’t have a soul.

Anyways, I’m all about this guilt free, healthy version of a traditional cobbler. It’s jam packed with berries and antioxidants (among other things…) so at least you don’t have to feel terrible about it. And, I promise you’ll still fit into your skinny jeans tomorrow.

Here’s what you’ll need:
♥ 2 cups mixed berries
♥ 1 apple, chopped
♥ 3 tablespoons lemon juice
♥ 1.5 tablespoon stevia
♥ I cup oats
♥ 1/2 cup coconut oil
♥ 2 tablespoons honey
♥ 1/4 cup butter

The how to:
♥ Combine berries, apple, lemon juice, and stevia in a bowl. Mix well until all ingredients are combined. Place mixture into 8×10 inch glass baking dish.
♥ Using the same bowl from your fruit mixture, cream together coconut oil and melted butter. (By using same bowl, you’ll get the super cute pink effect!)
♥ Mix honey and oats. Add to coconut/butter mixture, mixing slowly to achieve a crumbly consistency.
♥ Cover the fruit medley with your crumble!
♥ Place in oven on middle rack and bake at 375° for 15 minutes or until golden brown.

Skinny Snack: Lentil Endives

This is one of my go-to snacks when I’m in a hurry and don’t know what to eat that’s both healthy and filling. It’s really quick, looks pretty, and is (you called it) HEALTHY! Yay!

All you need is a pack of endives, lentils, and some bruschetta mix. Combine the lentils and bruschetta on a 1:1 ratio. Mix thoroughly and scoop onto an endive. If you’re getting fancy, try adding some crumbled feta or a touch of cilantro!

Rainbow Salad Recipe

Yum yum yum! This salad has forever been one of my faves and I was shocked when I made it for lunch and realized I hadn’t yet shared it on the blog!!

This salad is super easy and — like all of my fave salads — is tasty and filling and has so many goodies there’s no need for dressing! Weeee-heee to feeling healthy and full and #eatingclean.

This is how I make it, but feel free to substitute any goodies that you prefer:

♥Lettuce, finely chopped
♥Whole red beets, halfed
♥Garbanzo beans
♥Avocado
♥Sweet potatoes
♥Baby tomatoes
♥Green onion garnish

Mix in whatever proportions you desire! (I usually go big on the non-lettuce items bc let’s be real, lettuce is soooo boring.)

I really enjoy pairing this meal with my favorite coconut water. It’s $11 which is like WOW, but I continue to buy it time & time again. That’s a testament to how.amazingly.good. this stuff is! Try it here!

Juice Cleansing: Halfsies Pros & Cons

I just completed my first ever juice cleanse, & I’m having mixed emotions. Don’t get me wrong – I loveeee juices and can spend hours on end reading nutrition labels at Whole Foods & learning about cold-press techniques at pop-up juiceries. Several times per week, I’ll easily replace a late dinner with a green juice (Suja <<above>> is my fave because it’s crazy delicious and nutritious and doesn’t taste like green vom like some others). I’m a huge fan of the meal replacement philosophy, because juices are a great way to get nutrients when you just don’t have time for a  meal. But ONLY. DRINKING. JUICE?!

Let’s talk about that…

Before starting my three day cleanse, I boldly claimed that I couldn’t imagine that I would miss chewing things. Note: I did. Especially while everyone around me was carelessly nomming away. Find a buddy to juice with you and I promise you’ll appreciate the moral support! And even though you’re supposed to drink more juice than I was able to stomache, I never really felt satisfied. I wasn’t ever hungry because I was always full, but it was more of an I’m-so-bloated-with-juice full than an I’m-not-hungry full.

In the end, I felt super clean and rejuvenated and healthy and… OH YA: light-headed, crabby, ready for some vino, and down to chew on some almonds or kale or the carpet or my fingernails or ANYTHING I could get my hands on.

My ultimate conclusion: Juicing feels great if you need to detox from a vacay or if you’re looking to kick-start a healthy lifestyle change. But for someone who’s already pretty health-freakish, I really just missed eating quinoa and steaming my veggies. Sure, you can’t jam as many nutrients into your stomach when your veggies are in solid form, but there’s a certain happiness that you get from eating food that makes the process irreplaceable. Happiness is a nutrient too people!!!

I love the way I felt after juicing, but think I’ll probably stick to drinking juice for snacks or skipped meals here or there. I’ll save the intense cleansing for post-Vegas trips and other detox worthy times!

Happy National Donut Day! The Healthiest Donuts Ever

National donut day just so happened to correspond with the last day of my juice cleanse! (Stay tuned to read more about my juice cleanse and my win-win tips for surviving the horrid affair! But that’s a whole ‘nother story. For now – DONUTS!)

In an effort to stay healthy but still indulge in one of the year’s best holidays, I made these healthy donuts to snack on all week long. No sugars, no frying… these are some BAMF donuts.

Like most of my recipes, these are super simple & healthy! Read on to make your own!

What you’ll need:

♥ 1 banana
♥ 2 eggs
♥ 1 cup oats
♥ 2 Tbsp chia seeds
♥ 2 Tbsp cup flax seeds
♥ 1 Tbsp stevia (powder form)
♥ 2/3 cup whole grain flour
♥ 2 Tbsp Honey
♥ 1 Tsp vanilla extract
♥ 1/2 Tsp baking powder
♥ Pinch of salt
♥ 1 Tbsp cinnamon
♥ 1 Tbsp ground cloves

The how to:

♥ Mix the liquids, then blend in the banana.
♥ Mix in the dry ingredients until well blended. Place dough into a donut mold, or just make donut shaped circles on a cookie sheet. Sound crazy? We tried it, and it works just fine.
♥ Bake at 375° for 15 minutes!
