Beet, Pecan, & Goat Cheese Salad

This has been my go-to lunch this week (I’ve had it 3 times now…). I bought a giant bag of spinach and those already-ready beets from TJs, so I felt like I had to eat them all before they went bad!! But hey, definitely not complaining bc this salad is amaze and packed full of antioxidants!

Ingredients:

♥ Spinach
♥ Beets
♥ Goat cheese
♥ Avocado
♥ Pecans
♥ Lentils

Throw your ingredients in a big bowl in your desired proportion, and toss with balsamic! If you need a little extra something to keep you full, try adding a protein like chicken or shrimp! Sprinkle some fresh pepper on top, and voila! Enjoy!

Guilt Free Berry Cobbler

It’s winter, and when it’s cold out I crave desserts. Have you seen the New Girl episode where Nick’s girlfriend/sleep over buddy “…just isn’t a dessert person” and Jess freaks out? Because seriously!? Who is not a dessert person?? You can lie to yourself all you want, but I’m pretty sure if you don’t like dessert you don’t have a soul.

Anyways, I’m all about this guilt free, healthy version of a traditional cobbler. It’s jam packed with berries and antioxidants (among other things…) so at least you don’t have to feel terrible about it. And, I promise you’ll still fit into your skinny jeans tomorrow.

Here’s what you’ll need:
♥ 2 cups mixed berries
♥ 1 apple, chopped
♥ 3 tablespoons lemon juice
♥ 1.5 tablespoon stevia
♥ I cup oats
♥ 1/2 cup coconut oil
♥ 2 tablespoons honey
♥ 1/4 cup butter

The how to:
♥ Combine berries, apple, lemon juice, and stevia in a bowl. Mix well until all ingredients are combined. Place mixture into 8×10 inch glass baking dish.
♥ Using the same bowl from your fruit mixture, cream together coconut oil and melted butter. (By using same bowl, you’ll get the super cute pink effect!)
♥ Mix honey and oats. Add to coconut/butter mixture, mixing slowly to achieve a crumbly consistency.
♥ Cover the fruit medley with your crumble!
♥ Place in oven on middle rack and bake at 375° for 15 minutes or until golden brown.

Healthy App Idea: Stuffed Peppers

Fall festivities and holiday parties are just around the corner! In an effort to stay slim, healthy, and happy this holiday season, I’ll be posting a series of “Healthy App Ideas” throughout November / December! Serve these bad boys as options for your guests, and they’ll stay satisfied and healthy, without filling up before getting to the main course! Plus, these options are super easy to make and delicious to the most picky palates.

This recipe follows a simple 2-step approach:

1. Half peppers and line on a baking sheet

2. Mix crumbled cheese with diced tomatoes! Use whatever cheese you prefer – I like a mix of feta and creamy goat cheese!

That’s it! Use your fingers or a small spoon to stuff the peppers with your cheesy-tomato mix, then bake in the oven for 15 minutes on 350°

Skinny Minnie Lunch: Quinoa Salad + Bubbly!

This salad is so yummy!! It’s perfect for weekends like Memorial day when you’re going to be in a bikini and don’t want to bloat &/or overeat in the sunshine!

Here’s what you’ll need:

♥ 1 cup quinoa,  cooked
♥A few sprigs of mint leaves (ours are fresh from the garden! yay!)
♥ 1/2 tomato, diced
♥1/2 cucumber, diced
♥1 full grapefruit

Mix it all together and serve! We like to garnish with extra mint. Bonus: the grapefruit juice acts as a divine dressing, making this salad super low-cal!

Of course, why save all those calories if not to have a little drinky too ;)

I made grapefruit bellinis with my faveee champ – Perrier Jouet! (Yep – we got the extra large bottle. Party time!)

Here’s what you’ll need:

♥Champagne
♥Grapefruit

Scoop out some fresh grapefruit juice & meat and place into the bottom of a champagne flute. Top with your favorite champagne. Enjoy. Repeat.
