Skinny Snack: Lentil Endives

This is one of my go-to snacks when I’m in a hurry and don’t know what to eat that’s both healthy and filling. It’s really quick, looks pretty, and is (you called it) HEALTHY! Yay!

All you need is a pack of endives, lentils, and some bruschetta mix. Combine the lentils and bruschetta on a 1:1 ratio. Mix thoroughly and scoop onto an endive. If you’re getting fancy, try adding some crumbled feta or a touch of cilantro!
