Soba Noodle Dish

Ingredients:
Soba Noodles
Tofu
Takuan (Japanese pickled radish)
Red ginger
Cucumbers
Green beans
Soba sauce

*Most of the ingredients you could find at your local grocery store. You could also go to the Japanese store (Marukai) to get the soba noodles, takuan, red ginger, and soba sauce.

Fill a cooking pot with about a quart of water (depending on the amount of noodles you are making). As soon as the water comes to a boil, carefully place the soba noodles in the pot. Stir noodles as they cook for 3-4 minutes. When the time is up, quickly pour the noodles in a colander bowl, while running cold water to cool the noodles. You can also add ice cubes to the noodles to keep them chilled.

While the noodles are cooling, you can cut the tofu, green beans and cucumbers that will be placed on top of your noodles. Feel free to add fish, beef, or chicken to the dish. Once the noodles are cool enough, place them in a dish, add your toppings, and pour about a 1/2 cup of soba sauce on top. Enjoy :)
