Homemade Happy Hour: Moscow Mule

Processed with VSCOcam with g3 preset

Moscow Mule

1 Shot of Vodka
1 Cup of Ginger Beer
3-4 Ice Cubes
Slice of Lime
Frozen Blueberries (Optional)
1/2 T Agave Nectar (Optional)
*My Twist: Add blueberries and mint leaves

My all-time favorite happy hour drink is a Moscow Mule. I love the mixture of ginger beer and vodka, with the hint of lime! Since the ingredients are so simple, I decided to give it a try, and add my own little twist. In my opinion, there is really no particular order to add the ingredients, but I did ice, vodka, ginger beer, lime, blueberries, mint leaves, and agave nectar. After topping it off and mixing it up, I thoroughly enjoyed every sip! It was so easy to make, so I suggest you try it! If you have copper cups that you plan on using, I highly suggest placing them in the freezer the night or hours before – it helps keep the drink a bit cooler and refreshing!

What is your favorite happy hour drink?

Road Trip Playlist: Mammoth

Screen Shot 2014-09-13 at 11.43.44 PMA road trip is never complete without a playlist. I am the type of person who spends hours upon hours putting together a very intricate playlist. I consider the people who will be in the car with me, our surroundings, and our destination. Okay, maybe you don’t have to go that in depth when creating a playlist, but good music is vital for the drive.

The below playlist is for our mini road trip to Mammoth this coming weekend. It contains folky, indie, country, soulful music, which I feel are staples for a Mammoth trip. Nothing like listening to some Johnnyswim and The Civil Wars, while making my way through the Eastern Sierra! Check it out!

Leave a comment with some of your favorite Road Trip songs that we could add to our list!

Happy Sunday beauties! I had the best weekend sipping PSLs with besties and going to the farmers market and playing with puppies! It was a simple weekend of little pleasures, but those are seriously my fave! I’m anticipating a serious case of the #MONDAYBLUES mañana after this peaceful little perfect weekend.

Today’s ootd was Free People inspired but on a total Forever 21 / Target budget (WINNING!). I’m always trying to branch out and find fun bohemian pieces on a budget because I’m otherwise known to go overboard at Free People or Planet Blue << these shops are my weakness! This week, I rediscovered my love for Forever 21 & Tarjay Boutique and embraced fashion on a budget!

This Week’s Look:
◊ Skirt – Forever 21 ◊
◊ Top – Forever 21 ◊
◊ Necklace – Jasper Plum ◊
◊ Shoes – Target ◊

Fish Burrito Bowl

Processed with VSCOcam with g3 presetFish Burrito Bowl (Inspired by Chipotle)

Brown Rice
Black Beans (Unsalted)
Black Olives
Sliced Carrots
Bell Peppers
Fish (Mahi Mahi, Tilapia)

Fish Seasoning Ingredients:
Chili Powder
Cayenne Pepper
Garlic Powder (pinch)
Lemon Pepper

*Don’t forget avocado like i did :(

Since, burrito bowls are my favorite item to order at Chipotle, I decided to give it a go and make my own version of the delicious meal. I do have to say that I was not well-prepared, but with that being said, it all tasted pretty great! But in the blogging world, it is really all about the photos…right? Hehe.

I started by cooking the brown rice, since it would take a bit longer than any of the other ingredients. While it was cooking, I chopped up my veggies and seasoned my fish with all sort of yummy seasonings. Feel free to use whatever seasonings you like, but I went with what I had in my cupboard and sounded good. As soon as the pan heated up, I placed down my pieces of fish to start cookin! WOOHOO!

While the fish was cooking, I made sure to put the black beans and corn on the stove, since those took the least amount of time to prepare. As soon as my fish was done cooking, I added in my veggies (alongside of the cooked fish), which allowed the veggies to simmer in the same seasoning base as my fish! Soon thereafter, the layering began – brown rice, black beans, corn, veggies, black olives, and fish! I topped off the dish with some green salsa, cilantro and lime, which gave the dish the perfect KICK! Yay to a successful recipe and meal! Your move Chipotle! (JK. Their bowl is obvi 10x’s better…that cilantro lime rice though)

enjoy :)

Weekend Wardrobe: Kimchi Blue, Bebe, Anthropologie

This weekend was all about being bohemian chic. I wasn’t sure where the day would take me yesterday, so I wanted to be ready for any situation be it casual / artsy / dressy. We ended up going to a street jazz festival (artsy), followed by dinner at one of my faveee restaus (dressier), followed by game night back at home (casual). Turns out my outfit was versatile enough for all!

Since my dress has a patterned lace overlay, I decide to opt out of wearing a belt or any loud jewelry. I kept earrings and necklaces simple, then decorated my wrists with a chunky sequined cloth bracelet and a few bangles (and my Jaw Bone Up Band, obviii).

This weekend’s look:

◊ Dress – Kimchi Blue ◊
◊ Shoes – Anthropologie (forever ago!) ◊
◊ Purse – Bebe ◊

♥ Looks we Loved ♥

Screen Shot 2014-09-19 at 9.43.30 PMStyling Tips
• The emerald dress can be paired with a blazer for work, then stripped down to expose the open back for cocktails and a night out on the town! A great outfit for a top knot bun too!
• The boxy, hot pink dress would be easy to slip on for work, and since the look is very bold, all you’ll need to complete the outfit are simple black heels! In the evening, ditch the work bag for a cute patterned clutch!

• The long sleeved lavender dress is perfect for both summer and fall/winter. The light and refreshing palette can be great during a cool summer’s day, complemented with bold jewelry and wedges. When fall rolls around, you could easily pair the dress up with tights/leggings and boots!

Soba Noodle Dish

Processed with VSCOcam with c1 presetSoba Noodle Dish

Soba Noodles
Takuan (Japanese pickled radish)
Red ginger
Green beans
Soba sauce

*Most of the ingredients you could find at your local grocery store. You could also go to the Japanese store (Marukai) to get the soba noodles, takuan, red ginger, and soba sauce.

Fill a cooking pot with about a quart of water (depending on the amount of noodles you are making). As soon as the water comes to a boil, carefully place the soba noodles in the pot. Stir noodles as they cook for 3-4 minutes. When the time is up, quickly pour the noodles in a colander bowl, while running cold water to cool the noodles. You can also add ice cubes to the noodles to keep them chilled.

While the noodles are cooling, you can cut the tofu, green beans and cucumbers that will be placed on top of your noodles. Feel free to add fish, beef, or chicken to the dish. Once the noodles are cool enough, place them in a dish, add your toppings, and pour about a 1/2 cup of soba sauce on top. Enjoy :)
