These are the bomb-diggity, and are soooo totally easy it’s not even fair. Okay… I admit, they’re probably not the mosssst healthy breakfast option, but HEY, you gotta live a little. And we’re using coconut oil, almond milk, and real corn kernels to make cornbread muffins as healthy as they can possibly be!
Here’s what you’ll need:
♥ 1 box Trader Joe’s Cornbread Mix
♥ 1 egg
♥ 1/2 cup coconut oil, melted
♥ 1/2 can Trader Joe’s whole kernel corn
♥ 3/4 cup almond milk
Mix it all together! Seriously, just throw it in a bowl and stir it all up.
Set a cupcake tray with liners and fill 3/4 of the way with batter.
Bake in the oven on 400° for 20 minutes or until toothpick comes out dry.
Enjoy the delicious (semi-guilt-free) goodness!!!
