I’m back on my paleo grind, which means none of my favorite pastries for breakfast (tear, it was fun pretending to be Parisian with my pain au chocolat & espresso while it lasted). Desperate for a fun alternative to spoonfulls of almond butter, I spent this weekend in the kitchen in a trial-and-error kind of craze until voila! I perfected the world’s most delicious paleo breakfast muffin.
What you’ll need:
♥ 4 eggs
♥ 4 bananas
♥ 1/4 cup coconut oil
♥ 1/3 cup peanut or almond butter
♥ 1 tsp vanilla extract
♥ 1 tsp honey
♥ 1 tsp stevia
♥ 1/2 cup crushed walnuts
♥ 1 tsp baking powder
♥ 1 tsp baking soda
♥ 2 tsp cinnamon
♥ 1 tsp allspice
♥ 1 cup chia seeds, blended down
♥ Handful blueberries or dark chocolate chips (optional)
1. Smash together bananas, eggs, and nut butter using a fork. Add all remaining wet ingredients and combine in a large bowl. Melt down coconut oil & nut butters if needed. Use hand blender to ensure that all contents are evenly mixed!
2. Pulse chia seeds and walnuts in a blender. Add dry ingredients to your wet mixture, mixing slowly until smooth.
3. Spoon evenly into muffin tin with paper liners. Bake 20 minutes at 350°
Eat immediately while warm, or store for an on-the-go breakfast! If saving for later, keep in an air tight container, or refrigerate.
